Wholemeal Flour, Carrot, apple, blueberry, date Mini Muffins

Ingredients

  • 160 g Wholewheat self raising flour
  • 80 g Rolled oats
  • 40 g Flax seed meal
  • 1 tsp Baking powder
  • 180 ml Dates paste*
  • 60 ml Extra virgin olive oil
  • 1 Egg (optional)
  • 150 ml Milk
  • 1 Apple
  • 2 Grated Carrots
  • Chopped blueberries (as much as you like)
  • 1/4 tsp Cinnamon

Instructions

  • 1. Preheat the oven 170°C. Grease or line a 24-hole mini muffin tin
    2. In a bowl, mix together the flour, oats, , baking powder, and flax seeds
    3. In a small bowl, beat the eggs. Beat in the milk and oil.
    4. Pour the egg mixture into the batter, and fold together, being careful not to over mix.
    5. Fold in the date paste, grated apples, carrots and blueberries.
    6. Evenly distribute the batter into the mini muffin tin, filling each muffin cup about 3/4 full.
    7. Bake for 10 minutes, or until cooked in the middle and a toothpick inserted into the centre of the muffin comes out clean. Remove from the oven and allow to cool slightly before transferring to a cooling rack.
    Using the same Muffin base you can add any fruit or veggies you prefer for example, banana, choc chips, zucchini, cocoa and beetroots, pineapple a much more.
    *Date Paste
    1. Soak 2 cups of dates in 1 1/2 cups of water for 30 minutes or up to 8 hours.
    2. Remove dates from water and set the water aside.
    3. Puree dates in food processor or blender.
    4. Add a few tablespoons of soaking water to the date puree and continue to blend. Blend until the date paste is creamy.
    5. Add more soaking water if needed.
